Once a completion registers, you can find it in two places.
My Profile
My Profile lists your past and present events, and for each one shows the routes you've completed. It's the best overview of your progress in an event.
The event's Activity tab
Open an event and go to its Activity tab. Each activity you've synced for that event is listed with the completions it was credited with, so you can see exactly which activity earned which completion.
Your profile is private by default, so these are visible to you.
